Rava IdliRava Idli: Rava idli is a variation of the popular South Indian breakfast item, idli, made with rava (semolina) or Bombay rava. Rava idli is usually found in restaurants that serve the Udupi cuisine. Rave idli is served hot and is to be eaten along with Saagu and Coconut Chutney. A dash of Ghee poured on the top of Rava Idli adds to the overall taste.

Ingredients (serves 4):

For Rava Idli:

  • 1 cup semolina
  • 1/2 cup yogurt, fresh or sour
  • A pinch of baking soda
  • 2.5 to 3 tbsp water or more
  • 1 green chilli, finely chopped
  • 1/2 inch ginger, finely chopped
  • 10-12 cashews, chopped
  • 2 to 3 tsp ghee, for roasting the semolina
  • 1 tsp oil, for frying the cashews
  • Salt, to taste

For Tempering:

  • 1-2 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 10-12 curry leaves, chopped
  • A pinch of asafoetida

Method:

  • Heat the ghee or oil in a pan, on medium heat.
  • Add in the semolina.
  • Roast the semolina till they become aromatic and change colour.
  • Transfer the roasted semolina in a mixing bowl.
  • Keep aside.
  • In the same pan, heat 1 tsp oil, on medium heat.
  • Fry the cashews in the oil, till golden colour.
  • Remove the cashews from heat.
  • Transfer the fried cashews to the roasted semolina in the mixing bowl.
  • In the same pan, heat 1 tsp oil, on medium heat.
  • Splutter the mustard seeds in the hot oil.
  • Add in the chana dal, curry leaves and asafoetida.
  • Fry till the chana dal become golden.
  • Transfer this whole mixture to the bowl with roasted semolina.
  • Add in the yogurt along with chopped ginger, green chillies and salt.
  • Add water as required to make a batter of medium consistency (neither thin nor thick).
  • Rest the batter, covered, for 20-30 minutes.
  • Heat some water in a steamer, electric cooker or pressure cooker.
  • Just before steaming, add baking soda in the batter.
  • Mix well.
  • Pour the rava idli batter in greased idli moulds.
  • Place the idli stand in the electric cooker, steamer or pressure cooker.
  • Steam the rava idlis for 10-12 minutes or more till a tooth pick inserted in the idlis come out clean.
  • Remove the rava idlis from the mould.
  • Serve the steaming hot rava idlis hot with idli podi or with your favourite coconut chutney and sambar.

Note:

  • You can also add 3/4 to 1 tsp ENO or fruit salt in place of baking soda.
